Dishoom Glasgow
Kitchen Academy is our nine-month development programme for chefs ready to step into leadership. You’ll build your skills across all sections, grow your confidence in leading the team, and learn how to guide others with calm, care, and Seva. Along the way, you’ll deepen your understanding of food, quality, cost, and culture—and what it means to lead a first-class kitchen.
What the Programme Looks Like
• A chai chat with your Babu to talk about your goals and readiness to lead
• Cross-training in sections you don’t yet know, building confidence across the pass
• 14 classroom sessions covering Seva Leadership, food mastery, cost control, team development, and more
• Ongoing practical tasks to apply what you’ve learned
• Ongoing coaching, assessments, and feedback from your Head Chef and senior leaders
• Opportunities to explore leadership in other cafés and apply for roles when you feel ready

This programme is for any chef ready to take the next step into leadership—whether you’re looking to grow into a CDP, Sous Chef, or beyond.
Program Structure
You’ll train in your café while joining regular classroom sessions across the nine-month programme. You’ll rotate through key stations, attend 14 learning modules, complete written and practical assessments, and receive one-to-one mentoring from a Head Chef. Everything you learn is designed to build steady, confident leaders who raise standards across the kitchen.
