As the Head Pastry Chef, you will be responsible for conceptualising, developing, and executing an innovative and memorable dessert menu that complements the restaurant’s overall gastronomic vision. You will oversee all aspects of pastry production, from sourcing the finest ingredients to ensuring consistent quality and presentation across all dishes. Your duties will include managing a small team of pastry assistants, controlling inventory, maintaining strict hygiene standards, and managing costs effectively to achieve profitability targets. The ideal candidate will possess a profound understanding of classic and contemporary pastry techniques, a keen eye for detail, and a passion for creating visually stunning and delicious desserts. Responsibilities: Design, develop, and execute innovative and seasonal dessert menus. Oversee all pastry production, ensuring high standards of quality and consistency. Manage, train, and mentor a team of pastry cooks and apprentices. Source high-quality ingredients and manage supplier relationships. Control food costs and inventory, implementing efficient stock management practices. Maintain impeccable hygiene and sanitation standards in the pastry section. Collaborate with the Head Chef and other kitchen staff to ensure seamless service. Ensure all desserts are presented beautifully and meet the restaurant’s exacting standards. Stay abreast of current pastry trends and techniques. Contribute to menu planning and development for special events and banquets. Manage the pastry kitchen schedule and ensure adequate staffing levels. Qualifications: Professional culinary qualification or equivalent experience. Minimum of 5 years of experience in pastry, with at least 2 years in a supervisory or lead role. Proven expertise in a wide range of pastry techniques, including baking, confectionery, and plating. Strong understanding of food costing, inventory management, and portion control. Excellent leadership, communication, and team management skills. Creative flair and a passion for developing new dessert concepts. Ability to work under pressure and meet deadlines in a fast-paced environment. Knowledge of HACCP principles and food safety regulations. A dedicated and passionate approach to the culinary arts.
